Current Cooking Shows

There are some other shows on PBS and other network channels but I haven’t really seen enough episodes of those to give a view. Also I put these in alphabetical order by last name of major chef, not in order of preference. I started by finding out the background of these chefs at http://createtv.com/ . Then I just typed their name into http://www.dogpile.com/ Dogpile, my favorite search engine, to see if they had a website. In some cases I used their main website instead of the cooking website because you can easily find the cooking website from the main website. In the case of Everyday Food I did not use Martha Stewart’s website because you won’t find anything about the cooks on the PBS show.

You can’t have a cooking show unless you use the word ‘carmelize’ or some form thereof. Your food always tastes good, you never make a face when you taste it. You don’t have to tell me that you ‘really like x or y’ this is a given, otherwise you would be cooking something else. I do, how some ever, enjoy when you tell me WHY you are doing something.

He has an accent and his rhythm and cadence of speech is a little distracting but he is very enthusiastic.

niche – All Italian cooking, all the time.

Travel – Takes you to different cities in Italy and food markets in Italy. She cooks in her kitchen. She has guest chefs. Sometimes one of the guest chefs is her mom. The guest chef cooks unless it is her mom. Mom watches and advises. Sometimes the Italian people are uncomfortable when she speaks English for the camera. She uses all the parts from an animal for recipes. Apparently Italians have a favorite food made from corn meal called Polenta. They put it in a sandwich all by itself or they use it in different recipes.

one liner – Mexico, cooking

niche – All Mexico cooking all the time. He can speak (probably write and read also) fluent Spanish.

most knowledgeable – Tied with Steven Raichlen

most unusual scenario – half-naked in Mexico spelunking episode and all after food. Also unusual (for cooking shows) occasionally uses a pit to cook the dish.

He travels to different places in Mexico. The Spanish people seem to like him and they are not uncomfortable when he speaks English for the camera. He really researches the dishes and the history of the place he takes you to. He does not have guest chefs but his daughter helps him cook. He cooks at his home or at his restaurant.

one liner – French meets West and no guest chefs or guest cooks.

niche – Cooks in the Kitchen of his restaurant (Sleek) and you can see people in the background performing chores.

Doesn’t really travel it is all done in one kitchen or another.

He is enthusiastic and excited clearly loves what he is doing. He has won some awards for cooking. He starts out the show in his show kitchen and ends the show in the kitchen of one of his eight restaurants. You can download recipes from his website.

America’s Test Kitchen From Cooks Illustrated(Christopher Kimball) http://americastestkitchen.com/

one liner –  Consumer Reports meets Everyday cooking.

niche – They research the cooking process, re the chemistry that happens. They also research the utensils and equipment that is used.

There appears to be more going on than we can see.

safety tips – occasionally has some cautions.

Least traveled? They don’t go anywhere, most of the action takes place in the test kitchen.

Occasionally does a gourmet recipe. Most bang for your buck for non gourmet. They really test different chemical processes so you get the best flavor for the least amount of money. They cook food over and over again using different ingredients or different processes to get the best taste. They qualify traditional recipes by saying this recipe calls for X but we found that doesn’t really work so we found  Y (either a different process or different ingredient) works better.

Sara’s Weeknight Meals (Sara Moulton)(went to  U of M Ann Arbor) http://www.saramoulton.com/

one liner – Great meals in about an hour (or less sometimes).

niche – gourmet meals geared to cook on a week night.

A bright cheery kitchen to match her bright cheery personality. Knows her stuff. Kitchen is well laid out. Sara does not own a restaurant but has cooked in lots of them. Recipes can be found on her website. She has written several books. She has done a lot of work in television in a behind the scenes capacity and in front of the camera also. Sara does not really travel on her show but she has traveled the world. Sara’s Wikipedia entry http://en.wikipedia.org/wiki/Sara_moulton does not mention that she has won any awards.

I think he was Julia Child’s favorite person to cook (on TV) with.

Dirtiest Chef – he does not wash his hands very often. He usually just uses his towel that he has hanging at his waist.

niche – Health food plus singing and exercise.

She could do without the singer of her choice.

Doesn’t really travel it is all done in the kitchen or a room nearby (for the singing and for the exercises).

one liner – Barbeque, barbeque and more barbeque.

niche – Cooking with barbeques.

If I was his wife he could buy as many barbeques as he wanted to.

safety tips – Never forgets to tell you how to be safe while cooking. Keep the food safe and keep yourself from getting burned.

most knowledgeable – Tied with Rick Bayless. Sometimes he forgets to tell you to remove the membrane, usually with ribs.

most traveled – Without a doubt.

most countries – He has seen a lot of the world plus he has researched the history of the dishes he prepares.

most unusual food cooked (sorry forget what it was).

Rachel Ray (Rachel Ray) http://www.rachaelray.com/

niche – Does her cooking before a live audience and has guest celebrities to sit at the table with her.

Cooks food that is popular with the audience whether it is good for you or not.

Slowest Chopper and does not seem to use utensils that she is comfortable with.

Nick Stellino Cooking with Friends  Nick Stellino http://www.nickstellino.com/

one liner – His friends are (no surprise) Chefs.

niche – Talks with his guest host. A Lot. You wonder if they can actually cook the dish in the time alloted.

Talks with his hands. A lot.

He is very enthusiastic and seems very happy. One time I saw him come in to the set wearing a suit and carrying a briefcase. You don’t usually see chefs do this. He has not won any cooking awards but he was grand master of the Columbus Parade in San Francisco (a first for a chef). You can download recipes from his website. He has a blog.

Everyday Food (Martha Stewart) http://www.pbs.org/everydayfood/

niche – Has Five people prepare five dishes in one half hour, this doesn’t work for me because you don’t really get to hear about the dish and what to do with it due to lack of time.

If you don’t have a lot of time you can see five dishes prepared in this show.

Simply Ming (Ming Tsai) 蔡明昊 http://www.ming.com/simplyming

one liner – East Meets West

niche – When he has a guest chef on, he prepares a dish. Then later he helps the guest chef prepare a dish, then they sit down to a table and eat the dishes that were prepared on that day’s show.

He travels to China and shows us how they eat a dish in China. The Chinese do not seem uncomfortable when he speaks English for the camera.

Cleanest chef has a handy sink. Washes his hands a lot and when he is too far away from the sink he has a bowl of water to wash nearby.

niche – Has a person next to her that is the ‘student’, this doesn’t work for me. On NCIS the characters Ziva and DiNozzo’s animosity towards one another doesn’t work for me either. Joanne’s student never asks questions this is unrealistic.

I got out the sewing machine

We were all on a mission. We were all doing our part to get the ‘shop’ up and running with the least amount of money spent. I had purchased some fabric for two dollars at one of the many garage sales I went to trying to get stuff for cheap. The fabric was nice. It had southwest Mexican colors. It was my plan to make the fabric into a sink curtain to hide the pipes at the shop.

I had taken my measuring tape along so that I could match the fabric dimensions with the sink dimensions. I was in luck I had enough fabric. The previous person had made it easier for me because three sides were already folded over and pressed. I just needed to measure the fourth side. The previous person had left their pins in which was also very helpful. I was wondering what this person was going to use this fabric for, a window curtain, a closet cover?

It was with some trepidation that I went to the spare room for the sewing machine. Lifting it was work. The sales case it was in was very heavy. I carried the case to the living room and opened it up. I lifted the machine out of the case. I had packed the machine nicely and the spare parts container had not opened up too much, most of the contents were still inside. I looked at the bobbins because I wanted to know what major project had I completed last.  Hmmmm I had sewn outfits to wear after I graduated from the community college.

I was afraid of the condition of the machine itself. Was the tension screwed up? Was the bobbin tension screwed up? Was I going to have to dink around until the tensions were right? Did I give up and just pack it away because I couldn’t get the tension right enough to sew correctly? Was I going to be able to thread the machine without looking at the manual? Well I did have to look at the manual to thread the machine correctly. Then I practiced a seam on left over fabric. It sewed a prefect seam!!! No tension problems on top or on the bottom. So then I just started sewing. The first three seams were done quickly. I just had to measure the fourth seam and then sew it.

While I was sewing everything came back to me. How to do a reverse seam. How to turn on the sewing light and so on and so forth. It was like getting back on a bike. Soon I was just humming along making almost perfect seams. Before you knew it I was done. All that I had remaining was threading the elastic to go through the top seam to hug the sink. And after that attaching the curtain to the sink.

I used sticky sided Velcro to attach the curtain to the sink. Aside from what I had purchased I had to use some that I found at the shop and finally the curtain was attached to the sink.

The only thing I broke while moving

Was a plastic clothes hanger. I broke that while putting in the very last item in the POD in Ypsilanti.

With all this moving in and out of friend’s places and in and out of hotels & hostel rooms I only lost one pair of socks.

Best travel investment: the one dollar Styrofoam cooler I bought. It was big enough for a six pack of bottled water and there was room enough on top for a sandwich or whatever was leftover from my lunch. There was room for ice also to put around the water bottles.

Worst travel investment: the depends ‘piss pads’.

If I had to move all over again I would make sure I had a copy of my birth certificate. I would get a free credit check and then make about 10 copies. I would get a background check from the State of Michigan and make about 10 copies. My landlord gave me a letter of reference and I highly recommend getting one if anyone is going to move.

I packed some tools and kept them handy and had a quart of oil, plus I had band aids. I tried to think of all the things I would need for sure and all the things I might need. All in all I didn’t forget anything except for the birth certificate. Thanks to all the advice you all gave me plus all the stuff you guys gave me also.

I have not seen any desert creatures except for a geiko. I have seen a lot of hummingbirds, they were around the plants at the hostel. The first hummingbird I saw I thought it was a moth, but it didn’t move the same but after I had seen several I finally figured it out.

Common names in Tucson: Road Runner, Sierra, Canyon, Vista, etc. Lots of Mexican names.

Fast food places not in Michigan: Eegees, Yokohama Rice Bowl, Carl’s Jr., Sonic, What a Burger, Peter Piper Pizza, Wienerschnitzel and some I have forgotten.

I really need to get a push mower for the yard. The weeds have grown quite a bit. I am going to see what I can do to cut down some of the weeds tomorrow.

I usually think of things to write while I am driving around town. Hopefully I have remembered the all. I read all the emails I sent you guys to refresh my memory.

I haven’t felt like unpacking because why should I unpack if I have to move again. Today I started the unemployment claim up again. Changed my address etc. so that should help for a bit. When I do get a job I found a place that has inexpensive furniture.

One thing for sure fast food is not FAST in Tucson, because I have had to wait I have had time to think why. I think it is because they don’t have as many people on duty. Another thing about fast food here in Tucson, the menu is different. If you order the number 3 at McDonald’s in Michigan it is always the same item. Here in Tucson the number 3 could be 4 or 5 and it is different on each side of town also. So you had better read that menu before you order.

The grocery stores in general are nice but you can’t get the same items that you can get in Michigan. For example I could always get a loaf of bread that was whole grain and weighs about a pound and a half. I have had to look and look and go to more than three or four different grocery stores before I found a chain that carries something close. Albertson’s, Fry’s, Safeway and Food City are the main chains. Then there is Basha’s and some smaller chains like The Sunflower and the Fiesta markets. I bought the single serving Dannon yoghurt as well as the plain quart size in Michigan. No can do here in Tucson, they carry Dannon but different types of Dannon. Oh well. Guess I will have to change brands. Food City is very inexpensive but it doesn’t have a lot of variety plus it caters to the Mexican population. ‘Course the other grocery chains have more Mexican items also.

I had to get a jump for my car and then I took it to get fixed. One thing nice is that it sure does not cost as much to get fixed.

Thursday I had an interview for a job at Jo-Ann’s. If I get it it will be $6.75 per hour and only through December, but it will be a job and it will be selling something I like. I took some samples of my work to show the person that was going to interview me. I took a knitted sweater, a sewn top, a small latch hook rug, a couple of needlepointed pictures (one small and one medium), a crocheted beaded bag (one of those small ones to hang around your neck), cross stitched napkins rings, paper punched cross stitch magi and one pair of crocheted mittens. I will find out sometime Monday if they want me.
